As a publican, I'm right in my element. I love creating new dishes, meeting guests and ensuring all is as good as it can be.
The location, the locals and nearby towns and villages are just brilliant.
I've always enjoyed cooking, even from an early age I would make Swiss Rolls and Scones. Later I trained as a chef, barman, hotel manager, cellar-man and pretty much every department in the pub and hotel industry.
More lately, I've been inspired by Jamie Oliver's amazing recipes and cooking. I find his work so innovative and creative not to mention extremely tasty.
Everyday, I get a kick out of 'what can we cook for you today'. Whether it's a new dish or one of the favourites, I'm in my element.
Each day, I look out of our bedroom window at the Pevensey Castle. It's a view that I feel privileged to have.
